What do you prefer: Busy cities or quiet countryside?
I prefer the quiet countryside. It’s relaxing, and I love the views—it gives me space to explore and unwind.

Dream job as a kid?
As a child, my dream was to become a fashion designer. Unfortunately, there weren’t many job opportunities in that field during my studies. I started working in a hotel, first in the dishwashing area, but soon after, I got the chance to help in the kitchen making salads. That’s where I discovered I could channel my creativity. Eventually, I decided to pursue a career as a chef, and it quickly became my new passion.

The most beautiful place you’ve visited?
One of the most beautiful places I’ve visited is Boracay, a small island in the Philippines. The white beaches, walking on the sand, fresh fish, and stunning views: it was absolutely amazing.

What do you feel most nostalgic about?
Certain smells bring back memories for me. Sometimes, it’s a scent I can’t quite place, but it reminds me of the Philippines, maybe something burning or unusual. Another is the smell of my mother’s apple pie baking in the oven.

Dinner with any historical figure?
If I could have dinner with anyone, it would be a king. I imagine sitting at a grand table filled with food and drinks, surrounded by butlers and waiters. It would be an incredible experience.

Best gift you’ve ever received?
The best gift I ever received was a knife from Deborah Rieve, part of the collection of Lucas Rieve. After he passed away, she gave his knives to friends. Lucas meant a lot to me, so that knife is very special.

Hobby you’d love to pick up?
A hobby I’d love to explore further is photography. I enjoy walking around with my camera, capturing details in nature like the wind shaping the sand on the beach or the ice on the ground in winter. It’s something that lets me focus entirely on the beauty of the moment.

Proudest accomplishment?
I’m incredibly proud of our restaurant. Despite working with an old kitchen with just three burners, my team and I manage to make the most of it. It shows that you don’t need the latest equipment to create something amazing.

What’s an aroma that brings back memories?
The smell of my mother’s apple pie baking in the oven reminds me of home. Sometimes, other scents remind me of the Philippines, like something burning or an unusual aroma that instantly takes me back there.

What do you love most about your life right now?
What I love most about my life right now is that I’m living my passion. I’m working in the kitchen, spending time with family and friends, going to concerts, and enjoying holidays and dinners at other restaurants.

What’s one dream you’re still chasing?
A dream I’m still chasing is to visit Antarctica. I’d love to see the ice and polar bears—and of course, bring my camera to capture it all.

Favorite family tradition?
Our family doesn’t really have traditions anymore. Everyone leads their own life, and while my mother tried to bring us together, it became too difficult.

Person you look up to most?
The person I look up to most is my business partner. She’s incredibly knowledgeable about wine and remains kind and professional, even when dealing with difficult people. She inspires me to always be gentle and considerate.
